Hazel Nut Cookies

3 eggs
½ cup sugar
½ tsp. vanilla extract
2 tsp. cognac
2 cups ground hazel nuts
1 tsp. unseasoned bread crumbs
18 hazel nuts cut in half

Preheat oven to 300 degrees. Beat the eggs, sugar, vanilla, and cognac until thick and light. Fold in the ground nuts and the bread crumbs. Shape teaspoons of the mixture into balls. Place on a greased cookie sheet, about 1 inch apart. Press a half nut on each. Bake 15 minutes, or until delicately browned. This batch will make about 36 cookies. I have a tendacy to make this recipe, put them in the oven and….get on the PC. Next thing you know, I’m asking myself what the heck is somebody burning! Keep an eye on these for they are really great!
