| Pasta
con Cauliflower (sparacheddu)
Lets go
with spaghetti ( or really any type of pasta you like)!
Clean your
cauliflower. Using your paring knife, cut into flowerettes
and blanch for 4 good minutes. Scoop them out and
drain, leaving the water for the pasta. Bring your
water back to a boil, a little salt once it boils,
then drop your pasta.
In a sauce
pan, add:
1 tbsp. olive oil,
2 tbsp. butter,
1 clove of garlic,
pinch of red pepper flakes
Add the cauliflower.
Sautee
for five minutes or until slightly brown. Then add
pasta, a handful of parmigiano cheese, a pinch of
salt and pepper, and 2 tbsp. of parsley. Toss a couple
of times and serve to your family or your best friends.
Top this dish with more parmigiano cheese. This doesn't
take long and is so good, you will speak in tongues!
Fresh bread from the market, or from my Italian Bread
Recipe, heated before serving in the oven at the lowest
temperature for approximately 10-15 minutes, is a
bonus for this recipe!
